🍽️ Bobo Chicken

Cold skewers dipped in chili oil, uniquely flavorful.

Bobo chicken is a signature cold skewer snack of Leshan, Sichuan. Chicken, offal and vegetables such as lotus root, potato and bean curd skin are cooked, cooled, skewered and soaked in a large ceramic bowl of either chili-oil or rattan-pepper marinade. The chili version is richly numbing-spicy; the rattan-pepper version bright, herbal and tingling. Eaten cold yet deeply flavored, the chicken tender and vegetables crisp, it grows more aromatic as you chew. Local versions are soaked to order, mixed meat and veg, priced per skewer, and pair with a bowl of chicken-rice porridge. A leisurely cold snack for strolling or drinking, with a lingering tingle on the tongue.
