🍽️ Dezhou Braised Chicken
Introduction:
Five-spice chicken falling off bone.
Detailed Introduction:
Dezhou Braised Chicken is a famous specialty of Dezhou, Shandong, known nationwide thanks to the railway, and a flagship of Chinese bone-tender braised chicken. Local hens are dressed into shape, glazed with sugar and fried to a warm amber, then simmered for hours in an old master broth of over a dozen spices until the meat collapses and even the bones turn brittle. The skin is golden-red, the flesh juicy and tender, slipping off the bone with a gentle shake; the five-spice aroma is deep, the salt level even. Equally good hot or cold, it spread along the rail lines over a century ago and became one of China's most celebrated braised chickens. Vacuum-packed today, it is a familiar traveling companion and a classic Shandong souvenir.
