Huangqiao sesame cake originates from Huangqiao town in Taixing, Jiangsu, and is a widely known sesame pastry of the Jiangnan region. A layered lard-shortened dough is coated generously with white sesame seeds and baked in an oven until golden. It comes in both savory and sweet fillings, scallion oil or fresh meat on the savory side, fine sweet bean paste on the sweet. The crust is crisp and flaky, the inside soft, and the sesame aroma irresistible, best eaten steaming hot from the oven. Famed for a well-known historical episode during the war era, today it is both an everyday street snack and a popular souvenir pastry that visitors carry home from Jiangsu.
