🍽️ Huitong Night Noodle
Introduction:
Xianyang late-night noodles, spicy filling.
Detailed Introduction:
Huitong Night Noodle is the signature late-night noodle of Xianyang, Shaanxi, named after the Huitong crossroads area where its night stalls once clustered. Noodles are hand-pulled into wide belts, boiled and topped with meat sauce, chili oil and garlic sprouts, then tossed and eaten. The noodles are chewy, the meat sauce savory, the oil-sprinkled chili bold, and one bowl fills you up. Xianyang locals spend summer nights at the night market, a bowl of Huitong noodles with a few cold side dishes the standard evening out. It lacks the polish of a big restaurant but wins on huge portions, strong flavor and street atmosphere. As a representative of Xianyang's night-market culture, Huitong noodles have also become a window for visitors into the city's nightlife and Guanzhong wheat-noodle tradition.
