🍽️ Jingpo Lake Fish Feast

The Jingpo Lake Fish Feast is a signature lakeside meal around Jingpo Lake in Mudanjiang, Heilongjiang Province. Built around fresh lake fish caught in Jingpo Lake, it turns a single catch into a whole banquet, with every part of the fish cooked a different way. The lake yields carp, crucian carp, bighead carp and red-tail fish, among others; local chefs simmer the head into a milky white soup, steam or braise the fillets, and spicy-fry or deep-fry the tail and fin meats. The whole spread revolves around one word—fresh—with firm, clean-tasting flesh and little muddy aftertaste, often balanced by wild mountain vegetables from the surrounding area. It is a must-eat for visitors to the lake region and a fine representative of Northeast China's summer lakeside dining.
