🍽️ Sliced Noodles
Introduction:
Noodles sliced directly from dough into boiling water, chewy and smooth.
Detailed Introduction:
Sliced noodles are the pride of Taiyuan and all of Shanxi's wheat-based cuisine. Noodle makers hold a slab of dough in one hand and shave it directly into a boiling pot, producing noodles that are thick in the center and thin at the edges, cooked in moments. They are served with a wide range of toppings from minced pork gravy, tomato sauce, mutton or fried sauce to a mixed stew of wood ear, daylily and tofu. The noodles are smooth outside yet springy and chewy inside, carrying the savory sauce well. Shanxi cooking pairs one noodle with a hundred toppings, and locals always add Shanxi vinegar; a bowl of sliced noodles is the most common lunch in Taiyuan noodle shops and the first taste many visitors have of Shanxi's noodle culture.
