🍽️ Bacalhau
Introduction:
Salted cod fried or baked, Lusophone Macau.
Detailed Introduction:
Bacalhau, or salted cod, is a classic ingredient brought to Macau through Portuguese maritime trade. Fresh cod is cured with salt and air-dried until firm and intensely savory, then soaked to desalt before cooking. In Macau it appears in countless forms: flaked and stir-fried with potato, baked au gratin with cream, or pan-fried into golden fish cakes. The flesh flakes in firm, savory layers and pairs beautifully with potato, onion, olive oil and herbs. As one of the signature ingredients of Portuguese and Macanese cuisine, it is a fixture of the city's Portuguese restaurants and often appears on festive family tables, ideally enjoyed with a glass of white wine.
