Baoding
🍽️ Baiyunzhang Bun
Introduction:
Baoding old-style juicy steamed bun.
Detailed Introduction:
Baiyunzhang Bun is a time-honored halal steamed bun of Baoding, Hebei, ranking with Baoding donkey meat as a local specialty. It uses leavened dough wrapped around fresh beef and lamb filling, known for thin skin, generous filling and abundant juice. The buns are steamed over fierce heat; out of the steamer the skin is soft and faintly translucent, hinting at the pinkish filling inside. Bitten into while hot, you first sip the juice, then find a tender, aromatic, non-gamey meatball. Close in style to Tianjin's goubuli, it leans toward the savory north-Chinese halal taste with careful fat-lean ratio and stock-mixed filling. It is a common Baoding breakfast and lunch and a must-try for visitors. In old Baoding, century-old bun shops open at dawn; a steamer of hot buns with a bowl of millet congee is a plain, solid Baoding meal.
