🍽️ Changsha Pig Blood Tofu

📍 Province: Hunan 🏙️ City: Changsha
Introduction:
Pig blood tofu soup, old Changsha flavor.
Detailed Introduction:
Changsha Longzhi Pig-Blood Tofu is a traditional snack of old Changsha streets in Hunan, a savory soup dish. Fresh pig blood is allowed to set into a tender tofu-like curd, sliced thin and simmered in chicken or bone broth with wood ear, mushroom and scallion, then finished with chili oil, soy, vinegar and white pepper. The blood curd is silky, almost melting, while the broth is bright, spicy and appetizing. Keeping the curd delicate and balancing seasonings to remove any metallic edge is the craft. Changsha locals eat it for breakfast or late supper with rice noodles or scallion pancakes, and old shops along Pozi Street and Huogongdian are most famous. Humble in ingredient, it is a signature taste of Changsha's street life.
