🍽️ Chaoshan Beef Balls

📍 Province: Guangdong 🏙️ City: Shantou
Introduction:
Hand-pounded beef balls, springy and juicy, a Chaoshan snack icon.
Detailed Introduction:
Unlike generic meatballs, Chaoshan beef balls are made from fresh beef leg meat chopped and pounded on the spot. Cooks place the tendon-trimmed beef on a board and beat it hard with double knives or iron rods until it turns gluey, then hand-squeeze the paste into balls that set in gently simmering water. Because grinders and additives are avoided, the balls keep the pure taste and snap of the meat: they are milky grey-white, crisp and springy, with a tight grain visible when cut and a burst of juice inside. In Shantou they are endlessly versatile—lifted out of hotpot after they bob three times, dropped into kway teow soup for breakfast, or threaded on skewers with satay sauce as a snack. Locals judge a shop by whether a good beef ball bounces when dropped on the table, a vivid sign of the Chaoshan obsession with freshness.
