Detailed Introduction:
Chaozhou Fish Dumpling is a classic snack of the Chaozhou (Teochew) region in Guangdong, distinctive for using fish instead of dough as its wrapper. Fresh sea fish, often narrow-barred Spanish mackerel or hairtail, is scraped into a paste and beaten into a sticky fish glue, then spread into thin fish wrappers; a filling of minced pork, shrimp and water chestnut is wrapped inside and cooked in clear broth. The wrappers stay thin and translucent, faintly showing the pinkish filling; each bite is springy and briny from the fish skin, while the filling is sweet and juicy, and the broth clean and lingering. Unlike northern wheat dumplings, Chaozhou fish dumplings rely not on chewy dough but on the fresh bounce of fish paste. Often served as a soup snack with rice noodles or congee, they rank alongside fish balls and fish rice at Teochew restaurants and tea houses—a delicate way Teochew cooks turn the sea into food.
