🍽️ Dandan Noodle
Introduction:
Smooth noodles, spicy and aromatic, a Chengdu classic.
Detailed Introduction:
Dandan noodles are a Chengdu classic, long associated with street vendors carrying their wares on shoulder poles. Thin round alkali noodles are lifted into a bowl, topped with crispy stir-fried minced pork, chili oil, sesame paste, Sichuan pepper and scallion, plus preserved mustard greens. It hits savory-spicy-numbing richness with aromatic sauce, crunchy meat and springy noodles, oily yet not greasy. The dry-tossed sheen and the salty crunch of mustard greens are key. Served in small bowls and mixed as you eat, as snack or light meal, it is a Sichuan staple found from alley stalls to old noodle houses.
