🍽️ Dinghu Buddhist Vegetables
Introduction:
Dinghu Mountain vegetarian stew.
Detailed Introduction:
Dinghu Buddhist Vegetables is a refined vegetarian classic originating from Qingyun Temple on Dinghu Mountain in Zhaoqing, Guangdong, and a jewel of Cantonese Buddhist cuisine. It brings together mountain treasures from Dinghu—dried and fresh mushrooms, bamboo shoots, snow fungus, beancurd sticks, sweet osmanthus fungus and lotus seeds—each separately braised then combined and simmered in a rich vegetarian stock until deeply flavored. The platter is colorful and texturally varied: silky mushrooms, crisp bamboo, sauce-soaked beancurd, wobbly tremella, all umami without a trace of meat. Born in the temple kitchen, it later moved into city restaurants and became an elegant banquet dish, often the head of a vegetarian meal, demonstrating Cantonese cooking's ability to make vegetables taste luxurious.
