Detailed Introduction:
Guizhou Veggie Wrap, or 'silk doll,' is a famous street snack of Guiyang, Guizhou, named for resembling a swaddled baby. A paper-thin rice wrapper acts as the swaddle, holding a dozen shredded fillings — radish, mung bean sprouts, kelp, fish mint, sour radish and cucumber — then drizzled with a tangy-spicy broth of chili, soy sauce, vinegar and sesame oil. Eaten one-bite each, the soft wrapper and crisp vegetables absorb the sour-spicy sauce, fresh, appetizing and layered. Guiyangites buy it fresh at stalls on Erqi Road and Feishan Street. Light, low-oil and vegetable-based, with the distinctive aroma of fish mint, it is one of the most fun and representative vegetarian street snacks for visitors to Guiyang.
