Harbin
🍽️ Guobaorou
Introduction:
One of Northeast China's signature dishes, sweet and sour.
Detailed Introduction:
Harbin's style of guobaorou is the most widely recognized version of this dish in Heilongjiang. Sliced tenderloin is battered and double-fried to a golden crisp shell, but Harbin's glaze is built on tomato sauce with sugar, vinegar and a little salt, giving a glossy red color and a softer sweet-tart balance. Served while the shell still crunches, the meat beneath is smooth and evenly coated, garnished with ginger, scallion and carrot. In the cold Northeast, this appetizingly tart-sweet dish goes especially well with rice and appears in restaurants, home meals and banquets alike. Compared with Liaoning and Jilin versions, Harbin's is redder and more broadly popular, making it one of the first Northeastern dishes outsiders think of and an essential order for visitors.
