🍽️ Hezhou Stuffed Tofu
Introduction:
Hakka stuffed tofu at Guangxi/Hunan/Guangdong crossroad.
Detailed Introduction:
Hezhou Stuffed Tofu is a home-style classic around Hezhou, eastern Guangxi, a place where Hunan, Guangdong and Guangxi meet, so its cooking blends Hakka and local styles. Soft tofu is hollowed out, stuffed with a filling of minced pork, fish, mushrooms and scallion, pan-fried until both sides are golden, then braised until the sauce penetrates. Cut open, the tofu has absorbed the meat juices, the filling is plump, and the result is crisp outside, tender inside, savory and rice-friendly. Stuffed dishes are a hallmark of Hakka cooking, and Hezhou stuffed tofu is generously filled, often joined on the table by stuffed bitter melon and stuffed eggplant in a whole stuffed spread. It is both a daily family dish in Hezhou and a restaurant signature, and is a typical way for visitors to taste the fusion of three provinces in eastern Guangxi.
