Lingbao Roujiamo is a specialty of Lingbao in Sanmenxia, Henan, a western-Henan branch of the 'meat burger.' Its bun is baked from leavened dough, softer and fluffier than the Shaanxi baiji bun, with a fluffy layered inside; it is stuffed with slowly stewed, fall-apart pork that is rich yet not greasy, meat and gravy together. One bite gives a soft bun and tender meat, savory and juicy, contrasting with Shaanxi's crisp-chewy style. It is a common breakfast and quick meal on Lingbao streets, often paired with a peppery spicy soup or millet congee. To those familiar with Shaanxi roujiamo, the Lingbao version emphasizes softness, a gentler yet equally satisfying taste at the border of western Henan and the Guanzhong plain.
