🍽️ Linxia Hand Mutton
Introduction:
Hui autonomous prefecture lamb.
Detailed Introduction:
Linxia Hand Mutton is the signature dish of Linxia Hui Autonomous Prefecture in Gansu. It uses local plateau-raised castrated sheep, whose meat is tender with very little gaminess. The method is plainly boiled: bone-in mutton goes into cold water with only Sichuan pepper, ginger and salt, then simmered gently until the meat is just about to leave the bone but still holds together. Diners then eat it by hand or cut it, dipping it to taste. The meat turns pinkish and juicy, layered with fat and lean; eaten hot, each piece is rich with lamb fragrance yet never cloying. Locals pair it with garlic slices, spiced salt and local strong tea to cut the richness. The dish holds an honored place at halal eateries and banquets in Linxia, and is a must-try for visitors who want the pure, unadorned taste of northwest lamb.
