Luzhou is known as the Liquor City, home to Luzhou Laojiao baijiu, and braised duck is the everyday drinking snack found on every street corner here. The duck is slowly steeped in an aged master stock often infused with liquor and spices, coming out glossy brown-red, with tender skin and savory meat; tear off a piece and braising aroma, liquor aroma and meat aroma weave together. Luzhou locals like to chop half a braised duck, pour a pot of Laojiao, and drink slowly over conversation. The duck can be served as a cold platter or chopped and packed to go. It represents the city's food culture of pairing its famous liquor with street-level braised snacks, and is the most locally distinctive braised dish for visitors to the Liquor City.
