Quanzhou
🍽️ Mee Sua Congee
Introduction:
Ultra-thin noodles in starchy broth, breakfast.
Detailed Introduction:
Mee Sua Congee is one of Quanzhou's signature breakfasts, a soupy, porridge-like noodle dish from southern Fujian. Ultra-fine wheat noodles—mee sua—are boiled until they break down almost completely, then thickened with starch water into a silky, porridge-like broth. Toppings are plentiful and chosen to order: pork intestine, liver, vinegar-marinated pork, oysters, braised egg, fried dough sticks. The noodles have nearly dissolved into the soup, so each spoonful is smooth and warm, with toppings offering varied textures, finished with white pepper and cilantro, usually dipped with youtiao. It is Quanzhou's morning comfort food; small pots open before dawn, and a steaming bowl both warms and fills you up—a first taste of Minnan breakfast culture for any visitor.
