Steamed rice sheets cut into ribbons, beef ho fun base.
Detailed Introduction:
Shahe Rice Noodles are the cornerstone of Cantonese rice food across Guangzhou. Said to originate from the Shahe area of Guangzhou, rice is soaked and ground into a smooth milk, steamed into thin sheets and then cut into wide ribbons. The noodles are snowy white, translucent, slippery yet springy, and suit dry stir-frying, saucy stir-frying and soup cooking alike. The most famous dish, dry-fried beef ho fun, uses Shahe noodles over a roaring wok with beef, bean sprouts and scallion segments, prized for its intense wok breath and intact, unbroken strands. Shahe noodles appear in soup or stir-fry: a plate of soup noodles with congee for breakfast, a plate of dry-fried beef ho fun for late-night supper, a rice product that Guangzhou people meet at almost every meal. It defines the basic form of Cantonese ho fun and is the natural starting point for understanding Guangdong's rice-noodle culture.
