Introduction:
Young lamb ribs steamed, Ningxia banquet dish.
Detailed Introduction:
Steamed Lamb Ribs is a traditional banquet dish of Yinchuan, Ningxia. Rib or leg cuts of very young lamb are placed in a steamer with scallion, ginger and Sichuan pepper — no heavy spices, so the natural tenderness of the meat leads. The result is pale and white, fatty yet not gamy, the meat parting from the bone at a touch; dipped in pepper-salt or garlic-vinegar, it is as tender as tofu on the tongue, full of delicate fat aroma. The method is minimalist and relies entirely on quality, and Ningxia Tan-lamb is especially mild. In Yinchuan's Hui restaurants it is a premium banquet dish, particularly welcome as a nourishing meal in autumn and winter.
