Detailed Introduction:
Stone-Grilled Mutton is an ancient roasting method of the Xilinhot grasslands in Inner Mongolia, preserving the nomads' outdoor cooking wisdom. Lamb, often on the bone, is cut into chunks and sealed together with red-hot river stones inside a sheep stomach or iron pot; the stones' heat and trapped steam cook the meat. The stones' searing aroma blends with the juices, and the mutton needs little more than salt. The result is tender, juicy lamb with a faint smoky, stone-seared fragrance, slightly charred outside and tender within. The method grew from nomadic life where building fires and pots was impractical, and today it appears at herder tourist sites and Naadam festivals in Xilingol. Diners gather in a yurt, eating stone-grilled mutton with mare's milk wine, to taste the bold, back-to-basics character of grassland food.
