Lanzhou
🍽️ Sweet Fermented Barley
Introduction:
Fermented highland barley, mildly alcoholic.
Detailed Introduction:
Sweet Fermented Barley is a traditional sweet snack of Lanzhou and the wider northwest, made from highland barley grown on the Qinghai-Tibet Plateau. The grain is cooked until tender, then mixed with a sweet-rice starter and left to ferment. The kernels become gently sweet with a faint rice-wine aroma, chewy and plump, in a light, tangy, mildly alcoholic syrup. In summer Lanzhou people chill it and dilute it with water or milk for a cooling, thirst-quenching drink; in winter they serve it warm. Alcohol is minimal, so children and the elderly can enjoy it, and it remains a common summer street treat. Beyond beef noodles, it is the sweet refreshment many Lanzhou people remember from childhood.
