🍽️ Tianjin Jianbing
Introduction:
A thin mung-bean pancake wrapped around a fried stick, with sauce and scallions.
Detailed Introduction:
Tianjin jianbing is the city's iconic street breakfast. Vendors spread a thin batter of mung bean flour blended with millet flour over a griddle, crack an egg on top, sprinkle scallions and swipe with sweet bean sauce, fermented bean curd and chili paste, then wrap it around a crispy fried stick or thin cracker. The warm pancake is supple at the center and slightly charred at the edges, contrasting with the shattering crunch of the fried core, while savory, mildly spicy and aromatic notes come together in one bite. Tianjin locals eat it fresh off the griddle, often on the move, and long morning queues are a familiar sight. It is also one of the flavors most missed by Tianjin people living away from home.
