🍽️ Wanluan Pig Trotters
Introduction:
Braised trotters, springy and savory.
Detailed Introduction:
Wanluan Pig Trotter is a famous braised-pork delicacy originating in Wanluan, Pingtung, and widely loved around Kaohsiung in southern Taiwan. Front trotters are blanched then slow-braised in soy, rock sugar and spices until the skin is glossy and the flesh tender, then sliced and drizzled with the braising sauce. The skin is bouncy and gelatinous, the meat tender, the flavor sweet-savory, good hot or cold. The master braising recipe and long simmering matter; the older the master stock, the deeper the taste. Sliced-takeout shops and braised-meat stalls line Kaohsiung and Pingtung, appearing at drinks tables, rice meals and festival banquets. Travelers through Kaohsiung often pack a box home; it is southern Taiwan's signature braised trotter.
