Shunde
🍽️ Double-skin Milk Custard
Introduction:
Rich milky aroma, smooth and tender, a Shunde dessert classic.
Detailed Introduction:
Double-skin milk is the signature dessert of Shunde, Guangdong. Fresh milk, traditionally rich water-buffalo milk, is heated with sugar, poured into bowls to form a first skin, then the milk is poured off, mixed with egg white, returned and steamed, forming a second skin on top. The custard is milky white, silky as pudding and melts on the tongue with deep dairy aroma. Shunde versions rely on the natural richness of buffalo milk; it is enjoyed warm or chilled, often topped with red bean, lotus seed or ginger juice, or simply plain. It stands as the crown jewel of Cantonese sweet shops, especially in the Daliang area.
