🍽️ Puyang Wrapped Liangpi
Introduction:
Cold skin wrapped like a roll.
Detailed Introduction:
Puyang Wrapped Liangpi is a summer cool-food of Puyang, Henan, in which ordinary cold-skin noodles are eaten 'wrapped.' A thin cold-skin sheet—steamed from washed-gluten batter—is laid with shredded cucumber, carrot, gluten and spiced wheat strips, dressed with sesame paste, chili oil, garlic water and vinegar, then rolled tight like a scroll and cut into sections. The skin is smooth and springy, the fillings crisp, and sesame, chili and sour flavors hit together, cool, appetizing and filling. It is one of the most common summer snacks on Puyang streets, rolled to order and eaten on the go. Compared with tossed liangpi, the wrapped version is easier to carry and more substantial, a refreshing memory of summer for families in northern Henan.
