🍽️ Spanish Mackerel Dumpling
Introduction:
Fresh mackerel filling, coastal sweet.
Detailed Introduction:
Spanish Mackerel Dumpling is the iconic seafood jiaozi of Qingdao and the Jiaodong coast of Shandong, made with fresh spring Spanish mackerel. The fish is filleted, skinned and pounded to a paste—without much pork fat—then stirred vigorously in one direction until it becomes bouncy, wrapped in slightly larger-than-usual dumpling skins. Boiled, the dumplings are plump; one bite reveals tender, springy fish flesh brimming with juice, carrying the clean sweetness of the sea without any fishy edge. Jiaodong locals say mackerel is at its best in spring, around the Grain Rain period. It is both a family staple and a signature seafood dish at Qingdao restaurants, eaten with ginger-vinegar dip—a whole ocean in one bowl.
