🍽️ Jiangmao Wonton
Introduction:
Thin-skinned wontons, Anqing old brand.
Detailed Introduction:
Jiangmao Wonton is a time-honored snack of Anqing city in Anhui Province, a household name with roots going back to the late Qing and early Republican era. Though called shuijiao in the local dialect, they are actually thin-skinned, generously filled wontons: the wrapper is rolled paper-thin around a filling of freshly minced pork shoulder, which stays juicy and tender. The broth is a clean, long-simmered pork stock, finished with scallion, dried shrimp and a drop of sesame oil. The watchwords are thin skin, tender filling, clear soup; each wonton arrives plump, bursting with savory meat and a warm spoonful of broth. Eaten for breakfast or as a snack, it is an Anqing childhood favorite found both in old shops and street stalls, rounding off neatly with a small side pickle.
