🍽️ Hengli Noodle Soup

📍 Province: Guangdong 🏙️ City: Huizhou
Introduction:
Pork-bone broth with meatballs, old Huizhou taste.
Detailed Introduction:
Hengli Noodle Soup is the signature snack of Hengli town in old Huizhou, Guangdong. Its broth is simmered from pork bones and dried fish until milky and sweet; smooth rice noodles are blanched in it and topped with hand-pounded pork meatballs, pork intestines, beef brisket or a braised egg. The soup looks clear yet tastes deep and savoury, the noodles stay soft and slippery while the meatballs bounce between the teeth. Huizhou locals traditionally start the day with a bowl, drinking every drop of broth; a spoonful of chili sauce or pepper can be added to taste. Simple but skilful, it is the taste of old Huizhou at breakfast or late supper.
