🍽️ Dongjiang Salt-Baked Chicken
Introduction:
Dongjiang-style salt-baked chicken, fragrant skin and firm meat.
Detailed Introduction:
Dongjiang salt-baked chicken is the representative dish of Huizhou Hakka cooking, sharing the method of Meizhou salt-baked chicken but with its own character. It uses free-range three-yellow chickens raised along the Dong River, cleaned and air-dried, wrapped in paper and baked in coarse salt heated until very hot. The Dongjiang school prizes a dry, fragrant result, so the chicken skin is golden and firm, and when torn apart the skin is crisp and the meat tender, without excess juice, yet deeply salted through and strongly scented with sand ginger. Huizhou locals tear the chicken by hand into strips and dip it in sand-ginger salt or scallion oil to highlight the natural flavor. It is both a banquet dish and a vacuum-packed Hakka export sold to Hong Kong, Macau and Southeast Asia, embodying the Dongjiang Hakka style of refining simple ingredients while keeping original taste.
