🍽️ Weifang Kite Cake
Introduction:
As thin as paper, used to wrap dishes, a Weifang specialty.
Detailed Introduction:
Weifang kite pancake is a specialty wheat staple of Weifang, Shandong. Fine white flour is rolled into round pancakes about a foot across, paper-thin, pliable and slightly translucent, stacked soft without cracking. The dough is rolled out on a long wooden board and baked briefly on a convex iron griddle over moderate heat, which gives the pancakes their softness and a faint toasted wheat fragrance. They are rolled around scallion, sweet bean sauce, stir-fried mixed vegetables, donkey meat or egg, and eaten by hand for a mild wheat flavor with a springy skin. As the world's kite capital, Weifang serves these pancakes to guests during kite festivals. After visiting kite museums and Yangjiabu village, restaurants offer the thin pancake wrap as a rustic local staple.
