Zixi is Jiangxi’s bread town.

Zixi Bread is a regional calling card of Zixi County in Fuzhou, Jiangxi. Nestled on the western slopes of the Wuyi Mountains with dense forests, this small mountain county has nonetheless sent out a great many baking professionals who opened bakeries across the province and beyond. Made from high-gluten flour, eggs, milk and butter through kneading, proofing and baking, the bread is soft, springy and richly milky, ranging from classic sweet soft rolls to filled varieties with meat floss, red bean paste or coconut. Unlike factory-packaged bread, Zixi bread stresses freshness baked to order. Today it is both a daily snack for locals and an employment and industrial symbol through which this small mountain county reaches out to the wider world.
