🍽️ Fuzhou Soaked Noodle

📍 Province: Jiangxi 🏙️ City: Fuzhou
Introduction:
Bone broth over thin rice noodles.
Detailed Introduction:
Fuzhou Soaked Noodles are a familiar breakfast staple in Fuzhou, Jiangxi. Fine, smooth rice noodles made from local early-season rice are blanched in boiling water, then served 'soaked' in a rich, milky white broth simmered from pork bones. The noodles are soft and silky, absorbing the deep savoriness of the stock, and can be topped with pork offal, beef, beef offal or a fried egg, along with scallion, chili oil and pickled vegetables. The dish prizes a wide bowl of broth over smooth noodles, eaten right after blanching; it warms you up and is a common way to start the day in eastern Jiangxi. Old street shops light their stockpots before dawn, and nearby residents sit down with a bowl amid plenty of street-life atmosphere.
