Shaxian peanut noodles are the signature dish that carried Shaxian snacks from Sanming, Fujian, across the whole of China. Alkaline noodles are boiled, drained while hot, then tossed with peanut butter, scallion oil, soy sauce and black vinegar, topped with scallions. The chewy noodles are coated in a rich, creamy peanut sauce that tastes salty-savory with a nutty sweetness. A bowl of these noodles is classically paired with a bowl of bian rou, small wonton soup, balancing dry and soup. Originating in Shaxian, Sanming, the snack shops now line streets nationwide, and this simple bowl has become a national working meal for the rushed, the plain yet addictive staple of overtime and long commutes.
