🍽️ Shaxian Wonton

📍 Province: Fujian 🏙️ City: Sanming
Introduction:
Thin-skinned pounded-meat wonton.
Detailed Introduction:
The Shaxian Wonton is the national snack from Shaxian in Sanming, Fujian, known for paper-thin wrappers and crisp, tender filling. The pork filling is not chopped but repeatedly pounded with a wooden rod until it becomes a paste, then wrapped in dough rolled almost transparent, pinched into tiny wontons. Cooked, the skin is translucent and the filling fresh; bitten into, the meat is springy and crisp in a clear broth, often with scallion, seaweed, dried shrimp and a few drops of lard and vinegar. Wontons and mixed noodles are the classic Shaxian pairing—one soup, one dry, cheap and filling. As Shaxian people opened snack shops across China, this wonton became a signature. Its craft lies in pounding, and locals prize that bouncy bite. Visitors to Shaxian seek old shops for an authentic bowl and to understand this small-town taste that went nationwide.
