🍽️ Qinghai Noodle Pieces
Introduction:
Hand-pinched noodles in mutton soup.
Detailed Introduction:
Qinghai Ga Noodles are the everyday staple of Xining and the farming-pastoral areas of Qinghai; ga means small in the local dialect. Dough is pinched into thumbnail-sized thin pieces and dropped straight into boiling water, then either stir-fried with mutton, tomato, green pepper and potato or served in soup. The pieces are uneven yet chewy and smooth, the mutton tender, the broth hearty. Hand-pinching and the rhythm of pinching-while-boiling are the craft, passed down through plateau families. Qinghai locals eat it at nearly every meal and serve it to guests; a hot bowl in autumn or winter wards off the highland cold. Plain, filling and warming, it reflects the mixed multi-ethnic foodways of the Qinghai plateau.
