Xining
🍽️ Qinghai Hotpot
Introduction:
Layered copper hotpot, plateau style.
Detailed Introduction:
Qinghai Hotpot is a traditional plateau style popular around Xining, using a brass pot with a central chimney. Ingredients are layered from the bottom: cured pork, ribs or beef go in first, then handmade noodles and fried potato chunks, followed by cabbage, tofu and local Tibetan-style bread, and finally bone broth is poured over everything before the pot is covered and simmered. Over charcoal heat the layers exchange flavors—meat aroma sinks into the noodles, vegetables soak up the broth, and the bread turns soft outside yet springy within. Diners stir from the bottom upward, tasting meat, vegetables, noodles and bread in one hearty bowl. Given Xining's high altitude and cold climate, families gather around the copper pot to warm up; it is an affordable, beloved winter choice for home gatherings and hosting guests.
