Yanshan Hot Noodles are the signature breakfast of Yanshan County in Shangrao, Jiangxi. Handmade local rice noodles are dipped in boiling stock for just a moment until cooked, served in a bowl with the broth, then topped with shredded pork, pickled vegetables, peanuts, scallion and a spoonful of red chili oil. The noodles are moderately thick and springy, holding up to the heat without turning mushy, absorbent yet slippery with a pleasant chew; the hot broth releases a spicy aroma that truly wakes up the morning appetite. The dish prizes quick blanching and piping-hot broth, and it is the most common breakfast sight in the streets of northeastern Jiangxi. Locals often pair it with a fried dough stick or a clay-pot soup, eating until they break a light sweat.
