Zhenjiang
🍽️ Zhenjiang Vinegar
Introduction:
Sour but not astringent, aromatic and slightly sweet, one of China's four famous vinegars.
Detailed Introduction:
Zhenjiang vinegar is one of China's four famous vinegars, produced in Zhenjiang, Jiangsu. Brewed mainly from local glutinous rice through brewing, acid fermentation and aging, it is clear deep-brown, sour without astringency, aromatic and gently sweet with a lingering rice note. Unlike the heavier northern aged vinegars, it is soft and elegant, ideal for dipping xiaolongbao, dressing cold dishes and eating with crab. Zhenjiang residents rely on it for noodles, salads and shellfish, with century-old brands carrying the tradition. It is both the soul of Jiangnan seasoning and a famous bottled souvenir, tied to the city's vinegar culture museum.
