🍽️ Shiqi Squab
Introduction:
Zhongshan squab, crisp skin tender bone.
Detailed Introduction:
Shiqi Squab is a celebrated traditional dish of Zhongshan, Guangdong, a city renowned as a hometown of fine squab. Local crossbred birds are raised to about twenty days, seasoned, glazed with crisp-skin syrup and fried until the skin turns golden-red and paper-thin. The result is shatteringly crisp skin, tender meat, soft edible bones and abundant juice, often served braised-red or glazed with honey. Bird breed and crisping technique define the quality; Zhongshan roast shops fry them to order. It appears at banquets, tea houses and family feasts, and is a must for visitors. Along with Shenzhen's Guangming squab, Shiqi is one of Guangdong's two great squab names and a pinnacle of Cantonese tender roast poultry.
