📍 Province:Guangdong 🏙️ City:Meizhou
Introduction:
Whole chicken baked in salt, fragrant and tender, a Hakka classic.
Detailed Introduction:
Hakka salt-baked chicken is the most iconic main dish of Meizhou's Hakka cuisine. It traces back to the Hakka southward migration, when travelers preserved cooked chicken in salt; over time this grew into baking the bird in hot coarse salt. A free-range local chicken is cleaned and air-dried, wrapped in greaseproof paper, then buried in coarse salt heated until very hot and baked until done. The result has golden skin and white meat with a rich oil aroma; torn apart, the bones and flesh carry a subtle saltiness and sand-ginger fragrance, the meat firm, juicy and moderately salted. Meizhou Hakka people treat salt-baked chicken as a festival and banquet centerpiece, sliced and served with a dip of sand-ginger paste, perfect with rice or as a drinking dish. It embodies the Hakka taste for salty, fragrant and hearty flavors, and has spread with Hakka migrants across eastern Guangdong, western Fujian and overseas communities.
