🍽️ Bamboo Shoot Dumpling
Introduction:
Taro-starch wrapper with bamboo shoot filling.
Detailed Introduction:
Bamboo Shoot Dumpling, or Sung Ban, is a traditional snack of the Hakka highlands around Meizhou. A chewy wrapper is made from cassava or sweet-potato starch, stuffed with diced fresh bamboo shoots, minced pork and chopped shiitake, then pleated into triangles or half-moons and steamed. The skin turns translucent and glossy, through which the golden filling is faintly visible; the texture is soft yet springy, while the bamboo shoots stay crisp and sweet, lifted by the aroma of pork and mushroom. Built around seasonal mountain shoots, it reflects the Hakka way of making the most of forest produce, and is commonly eaten as breakfast, a tea-time bite or a festival treat, often with a dip of light soy sauce or chili.
