Glutinous rice in tofu skin with three delicacies.

Wuhan Doupi is one of the city's defining breakfasts of Wuhan, Hubei, most famously the three-delicacy version. A thin batter of mung bean and rice is spread on a griddle, layered with glutinous rice and a filling of diced pork, shrimp, egg strip and mushroom, then cut and pan-fried until the bottom turns golden and crackling. The bean crust is nutty and crisp, the rice beneath soft, oily and sticky, and the savory filling bites richly. Batter thickness and searing heat matter, and it is best fried to order. Wuhan locals pair it with a bowl of egg-infused rice wine; among the city's famous morning eats, doupi is an undisputed hero of steamy Hankou streets.
