Introduction:
Fried rice batter ring, crisp outside hollow inside.
Detailed Introduction:
Mianwo is a Wuhan-exclusive breakfast—a fried rice-batter ring. Rice and soybeans are soaked and stone-ground into a batter, seasoned with scallion and salt, ladled into a special convex iron spoon, and lowered into hot oil; the raised bottom of the spoon creates a hollow center while the outer ring puffs into a thick, crisp fritter. The result has a crunchy, golden rim, a paper-thin crisp center, and a soft, airy interior fragrant with scallion. It is at its best the moment it comes out of the oil—cool it and it softens. Wuhan locals eat it hot, usually alongside hot dry noodles or fermented rice drink, as a classic guozao combo. Variants include ones stuffed with glutinous rice cake; it is the street food Wuhan people grow up on and crave when away from home.
