Introduction:
Kiln-oven sesame cake, northern crisp.
Detailed Introduction:
Kang Oven Sesame Cake is a traditional baked flatbread popular in Shijiazhuang, Hebei and across northern China, named for being stuck to the inner wall of an inverted crock oven. Flour dough is layered with oil pastry, coated all over with sesame, and baked against the heated crock wall by residual heat. The cake comes out toasted yellow, covered in sesame, crisp outside and soft inside with distinct flaky layers, and a rich aroma of wheat and sesame. It can be savory or sweet: savory versions carry meat or oil pastry, sweet ones a sugar filling. Northerners insist on eating it fresh from the oven, split open and stuffed with stewed meat, braised beef or donkey meat for a full meal. On Shijiazhuang streets it pairs with mutton soup or tofu pudding for breakfast. Along with Baoding donkey burgers and Tianjin flatbreads, it represents northern China's oven-baked wheat culture and local love of toasty bread.
