Zhengding Ma Family Chicken is a signature braised delicacy of Zhengding ancient town near Shijiazhuang, Hebei. Local free-range tender chickens are braised for a long time in an ancestral spiced broth with star anise, cassia, clove and Sichuan pepper until the meat turns rosy, glossy and falls easily from the bone. The flesh keeps its shape yet is deeply seasoned through, with smooth skin and tender texture, excellent either warm or cold, shredded or cut into pieces. As Zhengding's old trade routes spread its fame, the chicken became a popular takeaway for visitors touring historic temples and a familiar cold braised dish on Hebei dining tables.
