🍽️ Tujia Bacon

📍 Province: Hubei 🏙️ City: Enshi
Introduction:
Pine-smoked bacon, Tujia New Year flavor.
Detailed Introduction:
Tujia Bacon is a traditional cured meat of the Tujia people in the mountainous Enshi region of western Hubei. Farm-raised pork is cut into large pieces, salted, then hung above a household hearth and slowly smoked over pine and cypress branches and rice husks for days. The finished meat has a dark golden, almost blackened rind, translucent fat and crimson-red lean flesh, with a deep, lingering smoky aroma. It is versatile in the wok: steamed until the fat renders, stir-fried with garlic sprouts until fragrant, or simmered in hotpot where it grows more flavorful the longer it cooks. In Enshi's mountain villages, nearly every household cures bacon once winter sets in, and it is the centerpiece of festival feasts. It embodies the Tujia way of preserving meat in a humid mountain climate and is an essential taste of western Hubei for visitors.
