🍽️ Houjie Roast Goose
Introduction:
Thick meat and crispy skin, a Houjie classic.
Detailed Introduction:
Houjie roast goose is the representative roasted meat of Houjie town in Dongguan. It uses local dark-maned geese, plumped, scalded, glazed with sugar syrup and hung over a wood-fired roaster using lychee or other hardwood. Houjie goose is known for crisp skin, thick meat and abundant juice; when sliced, subcutaneous fat sizzles, the skin is date-red and translucent, and it cracks under the teeth, while the flesh is thick, full and savory-sweet. Dongguan locals often pair roast goose with a bowl of lai fan rice noodles, pouring the roast gravy over the noodles as a classic combination, and dip it in plum sauce to cut richness. Houjie is a well-known commercial town in Dongguan lined with roast-goose shops, loved by both residents and migrant workers. It represents the local Dongguan adaptation of Cantonese roast goose and a vivid example of how Cantonese roasted-meat culture lives on in the towns of the Pearl River Delta.
